01 / ABOUT THE PLACE
Unwrapping a dorayaki at Baikatei reveals a striking silhouette: rather than two thick, pillowy pancakes, the confection is distinctively flat. Conceived by the second-generation shopkeeper after the shape of a bronze gong (dora), the specialty features a single sheet of thinly cooked batter folded in half over a generous filling of sweet bean paste. Biting into the wrapper reveals a firm, pleasant chew that immediately yields to the texture and sweetness of the azuki beans, offering the rustic character of classical confectionery rather than a modern pancake texture.
The showcase also presents a variety of traditional fresh sweets and baked items. Mikasayama, filled with an elegant young-leaf-green paste of green peas, carries a clean profile well suited to side-by-side tasting with azuki confections. Other dependable accompaniments for green tea include mame daifuku, balanced by lightly salted mochi and sweet bean paste, the gently sweet Furansu Manju created by the shop's sixth-generation master, and the airy, cloud-like Ukigumo.
Located in Shinkawa 2-chome, the shop operates on weekdays from 9:00 to 17:00. With regular closures on Saturdays and Sundays, stopping by during a weekday break or walk is the best approach when picking up items for gifts or an afternoon treat.
